South Australian here who lives in a tent and tours in a tiny hatchback. AMA 😂 We have very different conditions to the US, so while well-meaning, the advice isn't necessarily relevant. You can absolutely leave your esky out of the car and, given the heat, you really want to. I've chewed through several kinds of tents. My current tent is amazing but is no longer sold (BlackWolf 3p). The tent market here is horrific. You'll either pay peanuts for garbage or have to shell out thousands. Don't shell out thousands. Have a look online. Make sure you get something extremely well ventilated if purchasing from the northern hemisphere (tents are more suited to the cold). Oh, and a tarp is your friend. I set up my tent at the back of the car and tarp the hatch and tent so I get a breezeway in the summer. You don't have to do this in winter. EDIT: found one.
