Hell, I got a 3 just for myself *in case* I ever go camping with someone else. I like all the room for myself to stretch out in - sandy or grassy ground is like a mattress through the base :) - and keep my pack and boots inside and away from snakes, spiders, and possums.
For the weight difference the 3 person is the way to go. Technically that other tent fits 2, but it won’t be comfortable.
Had Helm 3 - lots of space yeah but it was really noisy in wind (like everything was just flapping all over the place) and bit too draughty, hadn't had great time two years ago at the end of spring in Scotland in it. Bought Vango Apex 3 - felt cramped but it was solid. Hard to ventilate (opposite of the Helm), the permanently attached inner frustrated me (compared to Banshee I have loaned few years before where you pitched the outer first and then hanged the inner nicely with Apex it just never went so smooth) and in general something just felt slightly off. Mainly it wasn't large enough for me and my partner + motorcycle gear. Couldn't even get the outer to cover anywhere closer to ground to block at least some of the wind induced draught. Went shopping again and purchased Robens Lodge 3 (older model with longer section poles) for last summer holidays in Cornwall and I feel finally fairly happy. It's sturdy, solid, there is enough room inside, the ventilation is decent (never had issues with condensation despite last trip to Cornwall being rather "humid") but it can be dried fast, and it doesn't get so hot so fast in the morning direct sunlight to overheat (I'd rather have it dry a bit before packing up on bike). Anyway - if you plan camping in colder places the Nevis/Vango tents might be more suitable in my opinion.
3 person. Perfect for a couple and can fit a dog too.
3 person. Having enough space to keep your packs and other gear inside is a huge benefit if it rains. It's also really nice to be able to change your clothes inside, especially if you are camping near other people.
3p is the way to go. For the minimal weight penalty, much more comfy when you’re stuck inside in bad weather etc…
3 person all the way for 2 people. If you aren't used to it you'll still feel cramped. The extra bit of room (bodily freedom) is well worth it.
