For 2 cots and small packed down size I’d be looking at a tipi, specifically the SeekOutside Redcliff. In my experience the square shape of the Redcliff is faster to pitch than traditional round tipis, and the square shape allows the cots to be tucked into the sides.
If you care about weight for backpacking, take a look at a seek outside redcliff with their large ti stove. The way mine is set up weighs about 6 lbs. I’ve put it through a lot of use and it’s held up great
