The Nevis is fine (I have the 100) and have used it at glen level in the Cairngorms a bunch but it can flap about a bit due to the single pole depending on where the wind is coming from.  Have been looking at upgrading to the Helm Elite 2 myself for that extra bit of stability. As others have said it's a bit more but it's a good price for the design, weight and HH without getting into proper spenny territory.

Helm 2, unless you are intending to use it for 2 and are tall. I don't think I've ever seen a bit of gear from One Tigris that looks like it is worth buying.

Helm 3. We did WHW in our Helm 2, bags un the vestibules, we had some rain but the bags were OK. Helm 3 gives you that extra space for your gear.

I have just got the wild country by terra nova helm 2. I am very impressed with every aspect of it so far. Would definitely recommend you have a look. It’s £330 on terra nova’s website. But if you google it you can get it for just under £250.

Incredible tent, tiny bit heavy but depending on your weight, it might not be an issue. I love mine, just about to upgrade to a durston though. I really hope it doesn't get much condensation! (Unlike my gossamer 😭)

As others have mentioned on here in more detail, a "true" 4 season tent will be a bit beyond the budget category, however as an honourable mention for a tent which I feel is in the 3-4 season category I'd suggest the Wild Country Helm 2. Unless you're intentionally going out in extreme conditions or going to the Cairngorms in the depths of winter, it'll do everything you need it to. I have experience with one in blizzards, heavy snow loading, summits with strong gusty winds, etc and it's handled all of it with no problems. While it wouldn't be my first choice of tent for true winter use, it is a great budget conscious compromise that will do you well as a "1 tent for all conditions" purchase. A couple of other similar options are the Wild Country Hoolie and Wild Country Blizzard.

Yeah it heavily depends on the specific tents in question and their design. My Abisko Lite flies up in no time but I've used other tunnels that can be awkward. I remember OEX Phoxx being a bit of a hassle to pitch. Out of those two I'd definitely be choosing the Helm 1. I haven't used that but have used the Helm 2 and it's a palace inside, for the winter months I really value a bit of extra space inside even if it means carrying more weight.
