Not sure what your budget is, but if you go with a multi-channel dashcam, it can record all around your car. Been using a Vantrue N5S for a while now, its 4-channel setup covers pretty much every angle, both inside and outside the car

Vantrue S1Pro or, what I have now, the N5. No drilling. TBH, I've never encountered a dashcam that required drilling for a rear cam.
You're unlikely to find one that doesn't do WiFi. The cams I am familiar with are not talkative, but I'd guess that some of the cheaper ones are. I have a Vantrue N5, four channels, but out of your price range.
I got the Vantrue N5S + hardwire kit for my RF ND 2023, it was a bit on the expensive side but it covers everything.
I recently got the Vantrue N5S. I had the older model on my trade in and worked like a charm. A bit pricey but the quality and the adhesive power on the windscreen survived blazing hot days with no problems. Has a rear cam. Don’t forget to get the right SD card and cable adhesive clips.
Spend the $ and get a Vantrue. N2X is on sale on Amazon for $150. It records front and interior. Or splurge and get an N5S, also on sale on Amazon for $300, records front rear and interior from 2 angles. If not those then do some research and find one you like. Don’t get the cheap Chinese ones. Also, get a decent sized memory card for it.
