Others have had good points here, but I also think it’s important that it’s very hard to consistently have all of the same factors affecting your coffee, so having a machine do the exact same thing every time is going to make it somewhat inconsistent. A person who knows what they’re doing can judge things like the age of the beans, the grind, etc., and make minor adjustments. Even though I regularly use a Chemex Ottomatic for instance, I’m pretty active in making sure the bloom is consistent and adjusting the dose to account for the age of the beans, etc.

Yes. Moccamaster is better than some because the boiler and internal tubing are made of metal. Leeching occurs more with hot water and prolonged contact. But the hot water does move through the brew basket into the pot, so it's not perfect. Ratio 8 is a borosilicate reservoir, all steel and glass internals. It or Chemex Ottomatic are probably your best bets.

I’ve used Moccamaster and a bunch of other drip coffee machines as well as manual pour over. I landed on Chemex ottomatic and used it for over a year. Fill water to line and 75g coffee varying grind size depending on bean and extraction taste. It’s good coffee, minimal plastic exposure, simple clean up and not ugly / overly large. Most importantly, wife loves the coffee - she’s why I even started this journey.

I started getting into coffee and went the moccamaster route and disliked all the parts and cleaning. Tried a number of different coffee makers, pour overs and while it was good it was all a lot of work. For coffee I ended up with the chemex ottomatic and it make great coffee in my opinion. I paired that up with a Eureka Chrono grinder. Then decided to go the espresso route and purchased a Breville double boiler. Wife loved the espresso but I had to make it. Wanting to get back to drinking coffee and less making it I got a Delonghi Magnifico evo from Costco and it makes really decent espresso and cappuccino. Wife or I just go push a button and we have our coffee. Still use the chemex for a good brew as I don’t like the coffee out of the Delonghi. All this to say your post made me think you are more into drinking the coffee than the making of it so something like the automatic espresso machine might be more your thing.

As long as your pour over water is the right temperature; the grind is appropriate; and the water is clean; you're getting the extraction. The Moccamaster and Chemex Ottomatic are both pour over machines -- just really good ones.
