Fellow Aidan - multiple ways to tweak a brew to get the best tasting result for each roast. The Wilfa ones are also good (I have the precision that I’m happy with) but I would definitely go for the Aidan for the flexibility and the really fine tuning

I switched from pour over to this machine a few months ago and am extremely happy with it. The coffee is excellent and I wouldn’t switch back. Consistency is great with this machine, also makes a really good cup. Ease of use is great too. It’s nice having a free pair of hands to do other things while it’s brewing. Notably though, I don’t use the heating element. We drink what we make and don’t leave any behind to “stay warm” Edit- didn’t see this had an insulated carafe, mine is glass.here is my setup, with our fav coffee. https://preview.redd.it/tea3s1qvx1qe1.jpeg?width=3024&format=pjpg&auto=webp&s=8d207767dd2bbddfbf4b8fcc57b6a5756cfc75d6
