I love my barattza sette 270wi. Absolutely a beast and very precise. Never had an issue with it, grinding every day for past 2 years. Over 3000 shots made with it so far. Profitec Go is a solid buy. You need to spend a decent amount of money on a grinder too. I've got a Baratza Sette 270wi which is great for workflow as it grinds into the portafilter and grinds to weight, but it's a bit plasticy and incredibly loud. Would probably get a Niche Zero grinder if I could turn back time.
Interesting. I think you might need a bigger basket. I have an Fiorenzato Allground Sense and a Etzinger EtzMax LM, so I understand how the Sette 270wi workflow is better (the EtzMax is like an upgraded Sette). I have had some clumping with the Allground, but it hasn’t been major, I suspect that it depends on the types of beans we’re using. I think the Allground isn’t that hard to dial in, but you have to sacrifice a lot of beans since you need to toss out a dose with every adjustment to account for the retention. The Sette/EtzMax don’t retain much, so they are a lot of responsive to adjustments. The Allground grinds are fluffier that the EtzMax grinds and take up more space in the basket.

TL;DR: I have only one grinder that I use acros the range. My Fiorenzato AllGround Sense does a great, consistent grid from pour over to espresso. If I did a lot of French press, I might still need a mortar & pestle. I have a Fiorenzato AllGround Sense which, I believe, is just over the 1K$ US threshold. I've had two Baratza's (ESP and Sette 270wi) that did espresso to my liking at the very edge of their range but the motors both died. I then got a flat burr grinder that ground well with more range for espresso but was still in the price range of the Baratzas (400US or so) I won't name the grinder as I neither wish to defend or debate it but the motor also died. I did some research and bought the AllGround Sense for it's beefy motors and because I now had the taste for flat burrs. I've never used the finer third of the dial as for my beans and tastes, it's fine ... enough. I grind some decaf drip for my wife, do some pour overs for friends and have developed a sense of where the dial needs to be. I suspect that the first time I do a dark French press it may not have a fine enough setting bit that day may never come.
I love my sette 270wi. Grind by weight is getting left behind for single dosing but the simplicity of set and forget until the bag is empty is the only way I want to play anymore. Add in a brewing controller to brew by weight and espresso becomes "push button get perfection" instead of fumbling around for a god shot. I can't wait for a DF64/84 with a grind by weight system or similar. Throw a slow feeder between and a well sealed hopper and I'd buy one that day. The 270wi is often available for ~$400 used and is worth it unless you are sure you enjoy the ritual as part of the experience. Plus Baratza will fix anything wrong with it.
