Vario+W with steelies is probably all you need. Or one of the femobooks. Ode Gen2 is good too if you prefer the look.
I had a vario, 886, and upgraded it to steel burrs. I really enjoyed it and being able to also do espresso. But I found that I got more rounded notes and changed it up to try and seek out those specific flavor notes. Ultimately a personal preference
This. I have all the grinders for commercial use gb80 gbw , e65 gbw, varios, mazzer zm etc. For my home setup I just pre weigh and use a baratza esp pro. Extremely happy with it, especially at 179.00.
Flat burrs seem to bring out the fruit notes more. I have an opus, ceado, and vario.
🤣🤣 after a while I learned to recognize the difference. To me, I taste much more sweetness on the flat burrs.
It’s fine for your uses. Ignore the reviews. My first decent grinder was a Baratza Virtuoso. Enjoyed it a ton. Then, when I was ready to upgrade - pre the current explosion of great grinders for home use - I stayed with Baratza for their customer service and after-sales support; got a Vario which I later upgraded to the stainless steel burrs and PF holder. No regrets.
I have had a vario for 4 months now. I performed the alicorn procedure per the resources provided here and it works great! I can pull high altitude single origin shots and everything. The problem i’m running into is that the grinder falls out of alignment after some time. In 4 months, it’s fallen off twice. I re-align, and am back to winning, but it’s not the quickest process, and I worry that something is wrong. Anybody have the same issue?
My best coffee related purchase was an older Baratza Vario that was half the price of the current retail price. Use it daily and it’s a champ. Facebook Marketplace for the win my friend.
Did people still use the Baratza Vario? It doesn't compete in the burr size race, but actually does a good job with big grind size changes while being relatively consistent.
Bartaza is fantastic. Built like a tank, highly repairable/replaceable/modifiable. Encore for basic grind - drip, pour-over, etc. Sette if you want a highly capable espresso grind. Vario if you're going upscale.

They have a nice blended presentation for dark to medium beans (actually really nice burr for that profile). Retention generally is quite high. For light roast espresso I’d go another way personally. Depending on budget vario or allsense are good options (for gbw). If you want single dose options start at df54 and go up in price
The steelies in a vario make really nice coffee. Cant go wrong with a philos though or check out the new bookoo 80mm maybe
