I have a Varia (VS3 and 3 different burrs for it). I really like them. I upgraded to my Eureka Atom 65W for the same reasons (fast, convenient, good), but kept my Varia for the one-offs. Very low retention is an advantage. If a VS6 is in budget, go for it!
I really love my Eureka Atom 65W. (There is a 75W too). It’s fast, fluffy, non-static and grinds the exact weight you want in seconds. In your budget. Eureka’s build quality and excellent burrs, all made in Italy. 🇮🇹 (Great balance of clarity and body with Medium to Dark) 😍☕️ Lower retention, less clumping, faster and easier to adjust grind size down than Fiorenzato AllGround.

I use a Eureka Atom 65w, I highly recommend it for both grind quality and ease of use.
I have an Atom 65w and have had nothing but a really positive experience with it. It's definitely built more robustly then the Mignon and has dedicated espresso burrs, it's also much more solidly built and heavier than the Mahlkonig E64ws. If you like your Firenze maybe it's worth going up to the Atom 75w for you.

Lx Italia Edison 65. Got it on sale for about $500, I wanted an upgrade from my fellow opus since grind retention was beginning to drive me insane.
Does it have to be a single dose grinder? I see everyone is going that route since you are coming from the Niche and were considering other single dosing ones, but with that kind of budget you could get some nice grinder with grind by weight integration and a little 250gr hopper... On my side going from the Niche Zero to a Eureka Atom 65 high a small hopper has been an amazing upgrade in term of workflow, and the only thing I'm missing is grind by weight. But the fluff of the ground on the Eureka Atom mean I don't even do WDT anymore, just some tapping and I get a much better puck prep than with the Niche where I was doing it all, RDT, WDT, etc. I'm definitely not missing having to wet my beans to avoid retention and all. Overall I find myself never using my Niche anymore except for decaf, but it's true I don't mind swapping beans only once a week and going through a whole pack at once instead of having a rotation of 3-4 different kinds.

I use a Eureka Atom. I bought it because of it's decently sized hopper, stepless infinite grind adjustment, noise reduction features, automatic grind timer, and of course, Eureka's reputation for making quality machines. I paid around $1000 for it if I remember correctly.
There are issues with the cheaper Eureka grinders like the Mignons/Specialita etc. The grind chamber isn't isolated from the electrics, where the circuit board and motor are housed. I have seen many posts and horror pics where when their Eureka failed, they took it apart completely, and there is more than 30 grams of old stale coffee all over the circuit board and electrics (probably the cause of the fail) a shocking amount. I don't know why Eureka hasn't addressed this and made the grind chamber sealed off from the electrics like other good grinders do. They have known about this problem for years with their grinders. I guess they just don't care because it takes about 5 years to be an issue, and they don't care at that point. I don't think this problem applies to their more expensive grinders like the Atom but it does for many in their range.
