I went down this rabbit hole recently myself. I posted about my quandary earlier at the following link which you might find enlightening. After lots of research and feedback from users here I bought the Eureka Atom W75 ($1850 in chrome), became disenchanted with the vibration, noise, difficulty of grind size adjustment, and build quality so I returned it ($220 restocking charge). And after further discussion with five technicians in my area who service these things, I ended up getting the Fiorenzato F64 Pro Sense ($2,300) I’m happy with that decision. Certainly overkill for the home but it has features that were important to me like ease of burr chamber access without loosing grind size adjustment, top class vibration isolation for the load cell sensor, etc. I was a bit concerned about it's size, but with the shorter hopper, I think it will be fine. The AllGround Sense is another interesting choice but lacks true stepless grind adjustment. The E65W was another contender but I didn’t care for the esthetics and visual size statement. Happy to share more if you're interested.
Baratza Encore for press/pour over. Old Fiorenzato café grinder for espresso. Have a couple of 1zpresso hand grinders for when I travel or when I want to experiment. Very content.
This is the one I just bought. In case you are in the US, there's a Canadian company selling it for 950 shipped. Mine arrives tomorrow. (The kitchen barista store)
It arrived in perfect condition. I plan on using it this weekend. Haven't had a chance with the work week yet but definitely legit with shipping and the price was $350-$400 lower.

Same! Fiorenzato was too tall. Love the AP65. Consistent fluffy grounds. The big dial is a great upgrade. GBW is a quick, accurate, and clean workflow.
