I have the same workflow and used all the grinders here except for the Eureka. For the Fiorenzato, it was a decent grinder that made great espresso, but nothing mind-blowing. The pros: small footprint, aesthetically pleasing, good espresso (better than most cafes), easy to dial in (usually), small hopper, decent interface, easy to clean, not too loud, and it's on the more affordable end. The cons: No upgradability (though they use the same style of 64mm burrs as most other burrs like the SSP EP, MP and CV3 for espresso that are much better than the stock are too thick for the grinder so much so they touch before even the coarsest setting, and there's no way to calibrate it), not the best range for dialing in, retention, occasional stalling, grind speed. The mahlkonig E65 it's the grinder I ended up with, it made exceptional espresso for my taste (with the SSP HU burrs), and it basically is better in every way possible without most of the downsides. Pros: fast grind speed, upgradability (though options are still limited compared to other burr sizes), aesthetically pleasing (for me), great interface (especially the grind adjustment, the burr gap in microns is far more useful than you'd ever think), its pretty quiet for what it is, nice fluffy ground (no need to wdt just tap it on your counter top distribute a bit and tamp), no stalling ever, and you get the ledgendary mahlkonig name. Cons: it's expensive, the hopper is way too big for the home (you probably have to buy the smaller hopper), though aesthetically pleasing (for me) it's still way too big and imposing, not the easiest to clean, and once again it's so expensive and overkill for a home set-up. Recommendations and conclusion: Between the two, if you can afford it, the E65 is just way better and future-proof, but honestly, it's a bit too much for the home. As for recommendations, other grinders i would recommend that fit into you requirements and are cheaper than the E65 are the new Mahlkonig E64 ws its basically the e65 but smaller, same aesthetics, smaller hopper, gbw, but its also quieter and its 64mm meaning you have a large choice for future upgrades SSP the HU, MP, CV, or other brands like le brew etc. another good alternative thats a similair price to the fiorenzato is the WPM ZD-19 and the ZD-19sg, their both grind by weight with a accuracy of +-0.1 but I found them usually spot on, the zd19 is 74mm so you can use any burrs compatable with a mythos one, and teh ZD-19sg is 64mm so you get teh option for a range of upgrades the interface is not as good at the mahlkonig but better than the fiorenzato, built quality wise its sturdy since its meant for commercial use, its decently quiet similair to the fiorenzato. Basically, out of the options you said, without a doubt the E65, but if you're open to more options, I would go for the E64 ws since you get all the benefits and the aesthetics of teh E65 for cheaper and smaller, without any drawback but with more upgrability, if it's available in your country. But if you're more budget-conscious than the WPM is a solid option too. they all require some purging in themorning 4-6g work well for the allground, 6-8g for the E65. In the end, I ended up with the E65 with SSP HU burrs, which I'm satisfied so no regrets except that I could've saved a few bucks, and I also ended up with another single dose grinder the p64 so i switch out burrs and for rpm control for teh ocassional switch up for espresso and when I have more time. hope this helps

We have 3 grinders at work including 1 for decaf. The decaf is a smaller Mahlkonig e65s while we use La Cimbali Elective AT grinders for our other 2 beans (single origin and house blend). As above, it’s more about the workflow rather than the bean remnants mixing.

If you tend to switch beans often, get a single dose grinder. Otherwise, for $600 I’d grab that Mahlkonig. It will last forever, and presumably you have the space for it. If you want a different grinder someday, you can sell the e65 at a profit. I use a Mazzer Major picked up from a defunct coffee shop for $250. Same principle. Edit: great Hoffman video. I think he’s spot on. Like the memory lane trip down. Spotted my very own coffee setup in his brief montage of pictures from Home Barista. But we’re talking spending $600 for a grinder, not $2,000. A $600 home grinder isn’t going to grind better than the Mahlkonig.

Other than the scale and the electronic adjuster, they are more or less identical but the standard version is cheaper. I think you get an excellent value with the standard. The constant alignment is done very quickly. It's not a bother, you just need an accurate 1kg weight to do it. It shouldn't be a 999.4kg weight...
