Highly recommend the mahlkonig x64sd. It’s so fast. Very robust. Comes with all the accessories one might need and is a very small footprint. I’ve been so happy with mine. It’s like having a commercial machine at home.
I’ve also used the Z1, X64, and Timemore 64 - I did not find notable differences in the cup with lighter roasts (think Hydrangea). I think I have a decent palate and do not think I could differentiate them blind. I do not have experience using any of these for espresso so I cannot comment there. I use my Flair Pro 2-3x week and the J-Ultra is fantastic. I also live in a downtown condo so my views might be a bit different valuing kitchen space. I might also feel differently if I had espresso daily or brewed for multiple people. Fines are good for espresso and bad for filter, so no grinder can claim to excel at both, but I’m sure the grinders you listed will be more than decent for both.
The Mahlkonig X64 SD hate is just a circle-jerk by now. I have one, it works fine.
To make a long story short: I'm coming from a Bambino and I wanted to step up my game by going straight to the big leagues, having been able to get a good price on the Wendougee Data S. The machine is great. Regarding grinders, I went from a Eureka Mignon filtro grinder when I was a student, whose burrs I changed to espresso burrs, but I quickly saw its limitations. I switched again when the Mahlkönig X64SD came out; I had an alignment problem that I couldn't solve, and despite all my efforts, I couldn't reproduce the shots from my favorite coffee shop. The Wendougee is set up correctly, the problem is probably with the grinder... So I want to upgrade that one too. Aside from that, I have a 1zpresso j-ultra, which is nice for darker roast coffee, and I'd like something to deal with some medium/light roasted beans. What do you recommend? My budget is around €1000. I've considered the DF83, but also all those recent grinders that weigh the coffee for a more pleasant workflow (fiorenzato...) , but on the other hand, there's no way to change the rotation speed... Is that a good compromise?

I am not sure but have a feeling the turbo 078 is going to be very similar in cup quality as the m01. If you want a hand grinder the Pietro might be your best bet. Or you can get the new Mahlkönig brew grinder for a few more dollars. Probably the same as the Pietro in price. Cup quality the Pietro should be best and has multiple burrs that can be swapped very easily. It comes down to convenience if you want to hand grind or not. If not I would get the Mahlkönig or the 078 and if you don't mind grinding I would get the Pietro. If it was me I would choose convenience and get the Mahlkönig.
It is a bit of back and forth trying to figure out what's best. I've bought a few grinders, and in hindsight, I should have got the grinder I wanted because i always settled because of the price. In the end, I ended up buying another because of it but it was a good experience, and if your saving up for a specific one it might be worth buying the cheaper one till then. The other thing is the convenence part. It really is nice not having to hand grind in the morning. Ive heard bad things about the o78 too but no personal experience. Yea the x64. I feel like it's going to get some hate because it just came out, but it is supposed to be a good grinder. Their espresso one is good for espresso, so im assuming this is the same quality but pour over focused. I'm starting to wish I didn't get the ode and got that instead.
If you can afford it, the ratio8 is supposed to be really good. Also, they have a chemex auto machine, not sure the brand, but thats good. The aiden is small and might be what you want. To get a good cup, it might be hard with the standard profile, so you might have to tinker with it. If you can get a good deal on a bonavita or mokamaster that might be worth it. BTW, the ode 2 is an amazing grinder. Its what I use in the morning. The only other one I would recommend, which is a little more, is the new mahlkonig x64sd. That's the one I wish I had.
If you can afford the timemore than I would check out the Mahlkonig x64 sd and if not that the ode gen 2 is a great grinder to use. I would stay away from the Baratza and either check out the ode or timemore second. if you get a chance to look at the new Mahlkonig that would be my #1 choice.
Get the new Mahlkonig x64 sd and never need another grinder again. Unless you want that super clear acidic cup that only mp, pietro or zp6 will offer without going over 1000.
I’ve only had the Femobook A4Z for about a week, but so far I’ve been really impressed. For context, I own a few grinders including the K-Ultra, and this one has quickly become one of my favorites in my lineup. When it arrived, I did have to season it a bit. I ran around 340g of coffee through it, which definitely helped, but I was still seeing a fair amount of static at first. After pushing more coffee through it, the grinder started to settle and things reached a much better sweet spot. Flavor-wise, the cups have been very clear with great note separation. I’m getting very distinct flavors, which is something I really enjoy when brewing lighter roasts. One thing I noticed is that the body tends to be on the lighter side, almost tea-like but honestly I really like that style of cup. It makes the flavors feel clean and expressive. Also, big thanks to The Cow 🐮 and Lance, I reached out to them on Instagram DMs with a couple of questions and they were both super responsive and helpful, which I really appreciated. Overall it’s still early, but after a week I can say I’ve been loving the results so far. Excited to keep experimenting with it as it continues to season.
Yeah, I’ve been using it mainly for espresso. can do pourovers but I feel that it doesn’t give me the clarity that I want, and also gives me a little bit of fines. This one is set at 1600 RPMs so I find that it is a little faster in my opinion
It’s amazing. Smooth and quieter than my eureka.
