Highly recommend the mahlkonig x64sd. It’s so fast. Very robust. Comes with all the accessories one might need and is a very small footprint. I’ve been so happy with mine. It’s like having a commercial machine at home.

I’ve also used the Z1, X64, and Timemore 64 - I did not find notable differences in the cup with lighter roasts (think Hydrangea). I think I have a decent palate and do not think I could differentiate them blind. I do not have experience using any of these for espresso so I cannot comment there. I use my Flair Pro 2-3x week and the J-Ultra is fantastic. I also live in a downtown condo so my views might be a bit different valuing kitchen space. I might also feel differently if I had espresso daily or brewed for multiple people. Fines are good for espresso and bad for filter, so no grinder can claim to excel at both, but I’m sure the grinders you listed will be more than decent for both.

I am not sure but have a feeling the turbo 078 is going to be very similar in cup quality as the m01. If you want a hand grinder the Pietro might be your best bet. Or you can get the new Mahlkönig brew grinder for a few more dollars. Probably the same as the Pietro in price. Cup quality the Pietro should be best and has multiple burrs that can be swapped very easily. It comes down to convenience if you want to hand grind or not. If not I would get the Mahlkönig or the 078 and if you don't mind grinding I would get the Pietro. If it was me I would choose convenience and get the Mahlkönig.

It is a bit of back and forth trying to figure out what's best. I've bought a few grinders, and in hindsight, I should have got the grinder I wanted because i always settled because of the price. In the end, I ended up buying another because of it but it was a good experience, and if your saving up for a specific one it might be worth buying the cheaper one till then. The other thing is the convenence part. It really is nice not having to hand grind in the morning. Ive heard bad things about the o78 too but no personal experience. Yea the x64. I feel like it's going to get some hate because it just came out, but it is supposed to be a good grinder. Their espresso one is good for espresso, so im assuming this is the same quality but pour over focused. I'm starting to wish I didn't get the ode and got that instead.

If you can afford it, the ratio8 is supposed to be really good. Also, they have a chemex auto machine, not sure the brand, but thats good. The aiden is small and might be what you want. To get a good cup, it might be hard with the standard profile, so you might have to tinker with it. If you can get a good deal on a bonavita or mokamaster that might be worth it. BTW, the ode 2 is an amazing grinder. Its what I use in the morning. The only other one I would recommend, which is a little more, is the new mahlkonig x64sd. That's the one I wish I had.

If you can afford the timemore than I would check out the Mahlkonig x64 sd and if not that the ode gen 2 is a great grinder to use. I would stay away from the Baratza and either check out the ode or timemore second. if you get a chance to look at the new Mahlkonig that would be my #1 choice.

Best to invest in a commercial grinder. If you plan to just brew batch brews (which is weird way for a Michelin restaurant) best to get single dose grinder like the Mahlkonig SD64 or if the budget is forgiving, an EK43. The Mahlkonig X54 is okay but I believe it is best as an espresso grinder? I know its flat burrs. Are you also partnering with a roaster or you just buy random coffee you find that tasted great? Agree with the owner too, complex fruity coffees are difficult to dial in. I know it may taste wonderful. And if you will not do any story telling, its just a waste of expenses. You can still buy specialty coffee maybe like those 85 points scoring but it doesnt need to be complex fruit and acidity

At that budget? maybe DF83V with some SSP burrs. A 078S with SSP burrs could be an option too but if you like playing around with swapping burrs, I’d wait for the 2nd Gen 078S later this year for the easier and likely more idiot-proof tool-less grind chamber access. Kind of funny to see you mention DF64 and build quality in the same sentence, and then also say mixed reviews on the Timemores. If you’re going to get a DF 64mm grinder, get the CF64V or the DF64V gen3, not the DF64 unless you are just looking for cheap. But if you’re looking for cheap Chinese 64mm, you might as well get the Mokkom 64 and still skip the DF64. Philos is over budget Mahlkonig X64 SD is over complicated in all the wrong ways in terms of how it’s engineered. But you do get the German brand at least. Eureka has retention issues on top of the proprietary burr size, but it’s made in Italy so that could be a plus for people that are really biased against Chinese manufacturing

So generally speaking, I would say if you are unsure, but think you may want to explore the world of coffee and the various different beans and roasts out there, go with a 64mm flat burr. There are flat burrs that can produce similar profiles as conical burrs and a little bit of vice verse, but in general, flat burrs can produce lower fines if you want to focus on clarity of flavors for tasting and exploring different coffees. So if you just want a trusted brand in that category, get a Timemore 064S (or 078S if you want to go larger), or the Eureka Mignon grinder that fits your budget. The Mahlkonig X64 might also be in your budget range here. If you want higher specs and value for your money, then you’d want to look at the white labeled Chinese grinders like the DF64V gen3, CF64V, or maybe even the DF83V gen3 if you want bigger burrs and budget allows. The **V** part of all of these denotes variable RPM and also means they use a more reliable brushless motor. They are completely different products from the cheaper not-V models. You’ll also notice how these tend to have gen1 / gen2 / gen2.5 / gen3. That’s part of where they save on R&D costs by partially using the consumer as beta testers but also to iterate and make QoL updates to drive consumerism and upgraditis/fomo among existing owners. The designs should be well vetted now, but try to get the latest version. Both the DF64V and DF83V received fairly meaningful functional upgrades on the latest version.

Yes - have one and been using it for 2 weeks It's a typical flat burr flavor profile Build quality is excellent, no retention when single-dosing with bellows, even without RDT. Grounds are very fluffy. I think most people saying it's bad are parroting feedback from Lance, who I respect, but his use case tends to be quite different to the average consumer...most people aren't opening up their grinder every few days. The only thing that's irritating for me is that the dosing cup is also magnetized, so it throws off my scale which has a steel pan, works fine with my scale that has a plastic pan.

I had quite a few problems grinding fine enough. Since we also drink decaf, this was really exhausting at times. I also find the grind dial way too small and inaccurate. Cleaning was also mediocre. The threads on the burrs were defective, which according to the manufacturer is irreparable. It is no longer possible to insert the upper burr evenly. The coffee was very good when everything worked. Furthermore, I believe that a second version is already on the market. That’s not a great sign for the quality of the first version.
