Generally id suggest a high quality hand grinder for pour over (as youre already doing) but youre tired of that and wanting to electrify...seems like an 078 or philos would be the middle of the road option (between ode2 and zerno)...but if you really want to spend the money on something cool, a z1 is pretty cool. I own one and love it but i ONLY use it for espresso. I would not own it otherwise, as cool as it is. Id say grab a 078 on sale ($640ish) and spend the rest on nice coffee.
What matters more than anything is burr set and burr alignment. Burr set will set taste profile. Alignment will define consistency. Everything else is diminishing returns. For most, Mazzer Philos and Zerno Z1 (and the upcoming Z2) will be pretty peak for premium home grinding. You can get similar for cheaper if you want to invest time to align the burrs manually. You can spend a ton more but won’t make your coffee much better.

I haven't tried the I200D burrs yet. I got the machine with the 189 burr set installed, and haven't changed them since. I'm driking medium roasts most of the time, and the 189 have been really good so far, but I'm tempted to switch to the 200 set over the weekend to give them a try.
This. Absolutely fantastic grinder. And you’re getting a Mazzer product. My Philos came with a little handwritten note by the person that made it in Italy. I found that a really cool little touch.
Yeah. Listen to this guy. If the Philos is a little out of your budget, I’d recommend waiting a little and saving up until you can get it. I’m a very frugal person myself, but this is one case where buy once cry once is absolutely the right move.
The Philos was designed with easy burr swaps in mind for this very reason.
Aye, but it is also ~$200 out of OP's price range and takes 6 months to arrive. Lol. Great grinder, don't get me wrong, but theres other options.

It is quite cool that the varia can fit conical and flat burrs. But I bought a Philos, because I wanted something eternal and the Philos seems so far like that product. Its surprisingly heavy and feels like a tank. It is big, but Im very happy with mine.
Regular hopper (Ceado) and Philos for decaf and messing around with single doses
For a different conical, gbw: Etzingeg Etzmax LM Built like a brick to last a lifetime, but not sure how good for dark roast: Philos with 189d burrs, it bests Ceado in grind quality with the 200d for medium roasts
I bought it after the price went up, saw it when it was introduced, didn’t need it… ended up buying it at the regular price. I’m happy with it, built like a tank, no static (with the provided cup), no wdt, no rdt, no retention. Still wish I bought it cheaper but the grind quality is pretty well on par with my Mahlkonig e65w.
I got two grinders 😅 could not fit or justify my ideal all in one grinder sadly Main grinder in the morning and during the day needs to be fast, gbw for multiple portafilters, hopper for 3-4 days (300 gram) and enough quality to not require wdt. Oh, and look good. Ended up with a e65w gbs for that. Not everyone here wants to use scales, has a bit of retention though so not perfect Evening decaf or specialty grinder needs to not require wdt or rdt, ended up with a Philos with 200d burrs. Slow as fook but great taste, no retention, love it. My ideal grinder would require a new kitchen and house, but it would do grind by weight by weighing the beans, have 100mm burrs, multiple hoppers and a bypass, 1 um adjustment and sync with the espresso machine. They do exist but are too big for me and no way I can explain spending that much money 😅
