[Mokkom 64mm](https://a.co/d/9qX2Esl) - cheap in cost, shiny - and I have been having tasty cups since my purchase. And you can throw in a Fellow Ode 2 gen burr and have a very versatile setup for pretty cheap without breaking your $300 budget.
On the electric side - save a little - pick up the Mokkom 64mm and get the Ode 2 Gen burrs as a separate upgrade. Whole setup can go around 250ish these days.
The Encore ESP would be fine for what you want. No problem! 😊 I prefer the MOKKOM and Shardor to the DF54 for your use case. If you were specifically going for higher clarity pourovers only, then I would have recommended the DF54 + brew burrs.
Pretty good review, if a bit reserved. He says the motor in the model he reviewed is 200w. However, the motor in my Shardor is 260w, so I’m not sure if there is a difference in the model he has vs mine, or if Lance just got the specs wrong. He’s basically of the opinion that prospective purchasers should buy it with the idea of upgrading the burrs. Which is what I did. I installed Ode Gen 2 burrs in mine—Lance discussed quite a few burr options, but not the Ode Gen 2 burrs. He also tested the RPM, and it came in at 570. I think there was an opportunity to discuss the performance at the lower RPM vs other 64 mm flat burr grinders that grind at higher RPM (i.e, Ode Gen 2 is 1400 RPM). All-in-all, it’s a pretty thorough review, though.

The stock burrs on my Mokkom are fine, and most "elite" reviewers concur. Fancy new burrs would cost more than the entire grinder, with marginal improvement at best.
I just purchased this one, got it today and will test it out.
I have a Mokkom 64 grinder($180 on Amazon), it's working great for me so far. Shardor is the plastic body cousin brand, though it does now have an aluminum body grinder in the lineup now. The burrs can be swapped out for fancier ones should you ever want to.
I have the Mokkom and just use it for espresso. I like it so far. The Shardor is the plastic body cousin of the Mokkom.
I have a Mokkom 64 for espresso and a hand grinder for French press and pour over. If you're not making a big batch when you do pour over, you can probably save yourself some counter space with a hand grinder.
I was in the same boat and I just bought a Mokkom 64. $180 Solid build, can take SSP or Le Brew, or any other common 64mm flat burrs set.I have a set of Chinese SSP MP clones coming, I plan on posting my thought after I get them seasoned, and used a bit. If you go with the DF54 (and I very nearly did myself) look into the mod that allows you to use the Ditting 54mm burrs from Baratza. I know many people who swear by them, and they are quite affordable.
I have the Mokkom. Got it over Xmas. Been using it since and it’s been great. Fast and consistent. Have to bellow out some retention but other than that minimal static with RDT. Easy to clean as well. I’m certain the conical burr will do great as well. The only reason I went flat was cos I might want to experiment some other burrs down the line.
Get the Mokkom64 since you already have a conical and you can get a feel for the flat burrs since you want to end up with a Zerno.
I'm currently using a mokkom 64mm (basically a shardor 64mm with metal build) and it does great and is upgradable. However, if you can afford it I would probably go the df64 or timemore 64mm route just because they will have better warranty coverage, QC, and have proven longevity where as the shardor/mokkom are relatively new.

Just want to note the shardor people usually talk about here is the 64mm which is $150+ so a totally different machine. I have the mokkom 64mm which is the same internals as the shardor but with a metal body and comes with metal dosing cup, hopper, as well as single dose bellow. Although I’m not super experienced I’m loving it and can grind far finer than my bambino can handle without choking to its sufficient for me. A lot of value for $179 with amazon same day shipping lol especially with the df54 being on back order. Again I’m no expert but I’d recommend the mokkom

I just got the mokkom 64. Same internals but nicer aesthetics imo with the metal body, and comes with a metal dosing cup and single dose bellow. IMO worth the extra $20
