I have a df83 v2. Older version now. Modded it with a better chute and it has been fantastic. Very low if non existent retention. Recently put 151 mazzer burrs on it. Better in many ways than the philos
I have one. It’s good but I prefer my df83 with mazzer 151 burrs. I’m looking at getting rid of the niche in time

Trust me it’s not. It’s good at all roasts. There are lots of people who just follow trends. I got it when it was an unknown entity. Remember. It’s only a machine. A burr carrier. Eventually I swapped the burrs for Mazzer 151A. I like very traditional style espresso.
Niche was ok. A bit underwhelming. I prefer the DF over it by a mile. I do also have a WW Key mk 2 which is fabulous. I have an ECM sync 2.

It's all good, thanks for the reply my setup is a breville/sage dual boiler whit a df grinder. I would consider in your case the DF83 or df64 varient I have the DF64 ver2 on my side and I'm really happy whit it. The breville dual boiler is a great starting point I think since it's a dual boiler so you can tweek temperatures and not worry about the steam pressure like heat exchanger for exemple. The grinder for me the best bang for the buck are the DF 64 and in your price bracket I would be tempted whit the DF83 since it has a better motor and both have lot of user support. The burrs are standard in both the DF64 and the DF83 so you can upgrade those if you need to have an only espresso grinder or only a filter one.
I’ve owned and returned a df64 and a df83 from the same family of grinders after playing around extensively with burr alignment, different burrs, clogging, overheating, and static issues (and not resolving them, at least satisfactorily). These grinders are inexpensive for a reason, and they are poorly designed and built. Send it back and get a better grinder (which will cost more money, of course). A happy ending is unlikely if you keep the DF54. You’re probably looking at spending more than $500 if you want to get a better new grinder.
Starseeker E55 Pro. No problem grinding for espresso and up. Stepless, low rpm, 55mm conical burrs, built in ionizer, metal construction, almost no retention. IMO unquestionably the best value and best grinder in your price range. FYI, I’ve owned DF64 and DF83 grinders and IMO they are definitely not good grinders. Three of my kids have E55 grinders and I have one too. Everybody loves them.
Ah ok so far grinders I own are zp6, m01, 078, niche zero and df83 ssp mp burrs. So far my preferences are high clarity with a slight bit of roundness so that the cup maintains a sense of harmony. I didn't really like the ultra clear separated presentation I got with ssp mp burrs as it had a clinical quality and flavors weren't well integrated. So far I like the cups I get from m01 the most. So much so that I'm looking to sell all my grinders aside from the m01. And redo my electric grinder collection towards endgame. My palate is ok but I know people that have more detailed palates than me. But they've had some experience judging coffee competitions. I like to drink pretty much every sort of coffee from ultra light to dark. Coferments to washed. In terms of water I currently use lotus drops and use an approximation of feran's water recipe. I also use a zero water filter to make my distilled water. At this point I'm not hardcore enough to use a different water recipe for every different kind of coffee. And I prefer the convenience of ready made coffee water solutions as opposed to buying source minerals myself. I might delve deeper into that area later. I own a de1 for espresso, milk drinks and soup shots. I would say espresso is 25% of my coffee consumption and 75% is pour over/French press, aeropress type brewers. I actually quite like how forgiving the niche zero is but I find that the flavor clarity is lacking. So I think lagom 01 with ssp hu 102 mm red speed blind burrs would be an endgame for this style? I'm a part of a coffee share group where I will often only be able to get a single dose of a particular coffee. Some of these coffees are quite rare and can be expensive. So I'm looking for something ideal for this use case. Aside from that particular lagom 01 config I'm not really sure what other pour over/ soup shot focused grinder would complement it.
