Sounds like my experience too! Had an Ode 2 and didn’t love it. Now have an a4z for single dose and a Wolf’s Uniform if I ever want batch…
I have Wilfa uniform 2.0 which is a beauty. No belt , no static and thread is made of copper.
I use the wilfa uniform evo, coming from the previous uniform and uniform+ I think it's a solid upgrade considering the price. A lot more uniformity in the grinds. Certainly there are better grinders but the price is probably triple or double. Probably not a good choice outside of europe though.
Had a Sage (Breville) Precision Brewer paired with a Wilfa Uniform for 2 years. It made good coffee and had enough customization to enable you to dial stuff in, but in my experience, the lid design on the carafe is absolutely atrocious and you cannot fully drain it, leading to coffee crust and mold getting stuck in it and pouring away into your cup, leading to (obviously) foul tasting coffee. On top of that, the grinder's tread got seized so I sent them both back as they were still under warranty and upgraded to a Fellow Ode Gen 2 + Fellow Aiden, and the difference is night and day, they really do feel a decade apart. The recipes on the Aiden enable you to taste coffee as the roaster intended (for roasters that do provide shareable Aiden recipes) and the overall recipe customization is just more fine grained. Can't really speak for reliability as it's mostly plastic, but the cups coming out of it have so far been superb. If, however, you find all the customization tiresome and just want to hit a button and get coffee, I got my parents a Moccamaster and they've been delighted since, it's built like a truck where it matters, so you really can't go wrong with that.
All fun and games until you get the tread wrong/some coffee in it and it seizes shut with no way to fix it... ask me how I know!
Have had this little wonder for a while now (upgraded from the Svart) and it's done me well but wondering where my next step up might be from here. Though I enjoy the coffee I wonder if I could get any more out of it. All posts I've seen have been a huge amount of hand grinder recs which I'm not as bothered about, but if they're better than the Uniform would consider. I'm tempted by the Fellow Ode 2, but would that be more of a sidegrade than an upgrade? Is Timemore Sculptor about as good as it gets for a pure pourover-focused grinder?
Oh this is amazing insight thank you! So in terms of cups Sculptor Vs Wilfa not that much difference? Damn, you're right about the loud and slow! Wow, I'm jealous of your office! But that's good to know. For the Timemore I'd have expected more as it's about 3x the price of a Uniform and 2x an Ode Gen2.
