You're in a similar rabbit hole to me lol I'm actually opening up a roastery/cafe soon. Currently at home I'm practicing on a Lelit Bianca V3 as my cafes backup machine, the primary is going to be a Lucca A53 Pro. I'm practicing with the Eureka 75 W, which will be the main grinder with a Mazzer Philos as a backup. I've got the Timemore 078 for pour over for both home and one for the shop. I just bought a refurbished Yellow Gaggia 24 to do a gaggimate on for home when I do move my equipment to the shop when it opens

I’d continue saving more. 5 grand for a commercial capable setup is gonna get you some haggard nuova simonelli or la spaziale that’s seen better days. You can find rebuilt La Marzocco linea classics (assuming you have access to 220 volt) for 6-10 grand. Have a tech run through it and tune it up. Grab a mazzer Kony/ super jolly or major used for another grand and you’ll be dialed with workhorse gear for 10-12 grand based on your budgeting.

I researched this extensively when figuring out which dual boiler to buy. I got the Rancilio Silvia Pro X. It has copper pipes to the group head and the steam wand, and the steam wand does not have a teflon no-burn tube. The Profitec 300/600, the Lucca A53, and the Lelit Elizabeth all use teflon tubing for the steam path. Ignore the people ignorant about plastic in hot water paths. You are well informed and they are not.

You’d have to up the budget if you wanted something standard like a mini. If you want to stay within, I’d look at something like a Lucca a53 and eureka atom grinder. You’d want a double boiler, likely plumbed to a feed, and a nice grinder.

I’m very happy with my La Spaziale Lucca A53. Dual Boiler, AV, Pre-Infusion, Auto On Off Timer, and Front Load Reservoir. It’s also NSF rated. Its also less that 3k with wood accents/panels, if that’s your bag. Leaves plenty of money for a great grinder.
