You're in a similar rabbit hole to me lol I'm actually opening up a roastery/cafe soon. Currently at home I'm practicing on a Lelit Bianca V3 as my cafes backup machine, the primary is going to be a Lucca A53 Pro. I'm practicing with the Eureka 75 W, which will be the main grinder with a Mazzer Philos as a backup. I've got the Timemore 078 for pour over for both home and one for the shop. I just bought a refurbished Yellow Gaggia 24 to do a gaggimate on for home when I do move my equipment to the shop when it opens
LaSpaziale’s Mini Vivaldi machines are perfect for this, look cool, and especially when bought used are very affordable. I love mine!
La Spaziale Vivaldi (or mini). I have a Vivaldi II I bought used about 12 years ago that has only been back flushed and had the group gasket replaced every 5 years. I run a water softener before it and have not had problems. I also love the 53mm basket and find it easy to dial in new coffee. The volumetric dosing is amazing and I'd never trade it for a machine without it.

Love my Mini Viv! Ol girl turns 10 in about 6 weeks and the only maintenance she’s needed was a new head gasket every few years (*knock wood*). Imma send her in for a full descale as a birthday gift.
I’ve owned la spaziale mini Vivaldi for ten plus years. Great machine and would highly recommend. Price is right in 2200 plus range. Dual boiler great consistency and reliable.
I have a La Spaziale which, like my car, is a Golf GTI. Fun, but still practical. Capable of decent performance, but nothing too crazy. It’s consistent and works great, but you read stories online about reliability that keep you up at night. Been lucky with both so far 🤞
