I will pitch in my own experience with a home machine that still has commercial ratings. I am 4 years into loving the Lucca A53 from CliveCoffee. It is not full of crazy bells and whistles, but it's a dual boiler that recovers fast, and for me at least, makes consistent wonderful coffee. They recently released a pro version as well with some new features. I currently have it paired with the Mazzer Philos. I don't work for Clive Coffee, nor am I endorsed by them. I have one as well and it's amazing but completely out of budget. It doesn't make sense to spend $2500 on a machine and $500 on a grinder.
Why would you compromise on the grinder over the machine? The Lucca won't give you better shots than a Silvia Pro X but a $900 grinder will give you much better results than a $500 grinder.
We have similar setups. I have the A53 Pro and Philos grinder. This setup is amazing and I think the A53 is a vastly underrated machine.
Went from a LaSpaziale VII to the Sanremo You. Over 20 years with the VII which is a wonderful but extremely basic machine. The You has been awesome other than I needed to replace the control panel(which they sent for free). Since the panel change it's been perfect. I use the paddle 100% of the time as I roast my own coffee and have something completely new every week. With the paddle I can adjust on the fly with the first shot and then adjust my grinder based on what happens. The only thing I would change about it is the drip tray is too small! If my wife would let me drill a hole in our new counter tops, I would plumb the drain line in.
I recommend the La Spaziale Vivaldi 2 S1. Dual boilers, rotary pump, and pulls great shots. I’ve had mine for 10 years (purchased used) and I’m just now needing to do some maintenance on her.
I'm looking at the same machines as you, must haves are dual boiler, Rotary and Plumbed. I had a Vivaldi II for 14 years and it just died. It was a great machine, I just want something different and I never loved the style of it with the plastic sided. I am leaning towards a saturated brewhead again but the options from 2500-3500 are way more limited than E61. Also looking at the Rocket R58. I'm holding out for some BF sales, it's been a long month with just Drip and Aeropress
