One of the keys to great Espresso is puck prep. The integrated tamper on the Pro hinders that. Unless you want hot water on tap I'd recommend the 601 Premiere or better still if you use Costco their 655 Signature, in think it's called. That way you can do your puck prep and increase consistency, which I never got from the 701 Pro.
It looks like that is what OOP is looking for. Something that can replace their daily Starby’s run, not learn a new hobby.

As others have noted, you might need to assess how much your GF wants to get into this hobby. I had a mid delonghi and kept meaning to upgrade, and my wife one day just bought a semiautomatic Ninja and tbh it’s decent. It does auto milk frothing - that was her thing. She could make espresso but milk drinks never clicked, and I don’t drink them and she is up way earlier than me. Better to get someone something they want rather than what you want for them.
I just got the Ninja cafe (not the pro) at costco on sale rn for $450. I completely love it!!! In my opinion, its coffee dummy proof and amazing!!! I tried one of the other machines and went through several bags of beans before I gave up and realized that a machine like this will be easier. I also want to add, i bought the espresso beans at Starbucks that was the nail in the coffin of my previous machine that I was trying to learn. (Not the Pikes, but the regular) the beans were too oily, they gummed up my grinder. Which is absurd because they are by definition espresso beans. Stick to Illy or Lavazza or something else.

I’m happy with my $380 Ninja purchase and unlimited Costco return policy. On another note… Consider a username change as those hands are no longer idle. It’s gonna take me a minute to read this, if at all. You win good sir or madame!
You can get a refurbished Ninja ES601 for less than $400. Has everything you need included and is almost impossible to not dial in correctly. Or you can get a Refurbished 2019 GCP for around 300 and the best deal you can find on a grinder. Then you have a system that is upgradable with mods and better grinder.
It’s a decent deal. We bought ours for 425 from Ninja, Retail is 500, but getting it essentially 120 off is nice. But Costco showing it for 600, discounted to 500 is a little lame. We got it in December and it gets used multiple times a day. It chugs through water, but it’s great for how easy it is to use. If you have any specific questions I’ll be glad to answer.

Frother: we just wipe it down, but it comes with a little wrench to unscrew the nozzle if it gets clogged. Burrs: bean hopper pops right out with the twist of a knob and the top element of the grinder just rotates out. There’s also a built in cleaning program for the group head that you can run and it back flushes everything. Super easy to run all of that.
With how much we use it, the water goes fairly quickly, so it doesn’t have much time to sit. Maybe once a week? I’ve not noticed it getting slimy or anything.
It’s the same price range-ish… it’s almost 25% more if you value the Costco shop card. It also has horrible reviews (and a lot of them) in Amazon.
I use a nespresso now. It’s about five years old. I’m thinking that this thing will make better quality coffee, and it’ll make its money back in a year or two on coffee savings. My wife uses a keurig. Not sure if she will switch over to this as well, but between us, we probably drink 4 coffees a day total. Thinking it’s a timely upgrade of machines and will have long term savings while making better coffee
I did see it in store a week ago before they offered this one $100 off online. It was selling for $530 without the Costco shop card.
