oh boy do i have the answers for you! As a fellow ambi gamer who used a viper for the exact purposes you did, i've spent FOREVER looking for a suitable replacement. The Pulsar X2A v3 is the one to get (if available in your region), otherwise the wired model works just as well (if you dont mind being limited to 1K Polling). Do note that the medium size for pulsar is slightly smaller, and you lose the more ergonomic shape of the viper for an egg shape with no heel.
TLDR: Pulsar X2A v3(99$ USD) or X2A Wired(50$ USD).
If you play claw, expect to shift your grip slightly more forward on the mouse with your clicks landing closer to the front to make up for the lack of palm real estate in the back.

Right, but there are very unique charms about Vaxee that do make their products interesting.
For cheap ergos I mean, Deathadder v3 Wired and you'd be in pretty good shape for $50. That's my take at least, I mained one for like 2-3 years and it worked out great. If you're willing to go wired you can even get a Pulsar X2 Wired or Pulsar Xlite Wired both are $50. That trio are probably the best budget mice I've tried. Now that I'm almost all wireless I can't go back, using a wired mouse feels so archaic.
Vaxee is good but you are absolutely correct. In the budget category / $50 price range there are some top tier ergo shapes.

Im using currently the X2A in medium size, and if compare the dimensions, the X3 mini is slightly bigger
doesn't have sidebuttons on both sides though. best options for sidebuttons on both sides would probably be Pulsar x2a (comes in wired and wireless) or Logitech G Pro Lightspeed 2 (not the superlight, this one has buttons on both sides but weighs about 80g)
i can't think of any other ambi mice with buttons on both sides off the top of my head though.
It might be a bit pedantic, but I don't know how "on the fly" it is to have to stop using the mouse, turn it over, and then fumble through a potential series of button presses/wheel scrolling to dial in a desired change.
I do love my Pulsar X2A eS, but if I want to change the DPI "on the fly", it can be a lot less convenient to swap to a different DPI than it is the standard X2A, which because that version supports driver software, I can rebind any of the buttons/wheel to do that job to actually change DPI on the fly.
the Pulsar eS mice are great for being able to tune in and trust the settings to work at a desired performance level on any computer the mouse is plugged into, and then be able to tweak as needed, but I would consider it mostly a set and forget kind of deal rather than something I would want to actively be fiddling with on the regular
