I find this quite strange because I share the same concerns as you, but unlike you, the curved side of the EC2 is why I always used mice based on that; IME 3.0, and then EC2 versions over the years (EC2 OG with glossy sides, EC2 Blue rubberised, and a few years ago the EC2-DW. However, I switched to the Vaxee AX O because I experienced some skipping issues with a few EC2-DW units. My Vaxee has recently given me some double-clicking issues after a year and a half, and I'm thinking what's next

Damn I woulda thought Zowie would have some of the best click latency considering their price. Been gaming the EC2 for the last 5+ years

S: DAV3/V4 PRO, DAV3 Hyperspeed A: EC2, NP-01S, NP-01S Ergo B: DEX I didn't put Chinese mice because most are clones of the above shapes.

I haven't tried every mouse in the world but for ergos I really like the Zowie EC2 and for finger tip I love the VXE Mad R and the Attack Shark R11.

Difficult to tell you dude. What I've personally done is buy cheap chinese clones of the different classic shapes, 20-30€ a piece max. Then I've used them all for a while each and figured the shapes I like like that, thinking once I know what I like I'd spend the big bucks on the real deal but ended up being really satisfied with the 50€ range chinese mice.
