For a white-wall living room, I'd worry less about contrast specs and more about how much ambient light you'll actually watch with. If it's a mix of movies, sports and gaming → TK710 makes a lot of sense thanks to the laser light source and higher brightness. Also, I'd rather have a modern 4K projector than a new 1080p model at 100-120", assuming the budget isn't super tight. 👍
Can confirm, I got a refurbished TK710 directly from BenQ a month ago as my first projector and couldn't be happier. Can even watch films and play video games during the day.

Given your budget and setup, almost certainly a TV. You can get a really nice 75" Mini-LED with 144hz and VRR and still probably have a couple bucks left over to buy some DLC. That said, I just went to a projector with my PS5, and I LOVE it, but my total setup was closer to 1500 Euro. It's been fantastic for the types of games I play (Expedition 33 is *GORGEOUS*), but I don't think I'd get it if I was still a CoD guy like when I was a teenager. It performs great for Destiny, but anything faster might be a bit wonky. I got a BenQ TK710, a Samsung all-in-one Soundbar, and a 120" Grey soft screen that just attaches to the wall via hook-and-loop tape. I'm upgrading that soon, but it's been great for the last month. The resolution is comparable to my previous 4k TV, and I can go to about 110" in my living room comfortably.
You should be able to get the XGIMI Horizon refurb on their website around that. It's what I'd be using if I hadn't gotten a great deal on my TK710 this summer (Amazon Prime deals can be a heck of a thing if you get lucky)
I still love mine 6 months in, and my main use for it is PlayStation. I'm not sure how bad the rbe is on it, but BenQ tk710 is fantastic for latency and colour faithfulness.
TK710 can throw a 120” 4k image at 145” for right under 2k. If your walls and ceiling both are not painted black you will still want to go with a grey screen (if you already haven’t stumbled across this during your studies). Edit: Elite Screens do okay things with manual pull up and pull downs but if you’re going to spend 2k, I would go with a “fixed screen” something like this https://www.silverticketproducts.com/collections/fixed-projection-screens/products/str-169120-g . Extremely easy installation and you’ll be happy with the results. Pull ups and pull downs can get a “wavy” effect when a camera pans. It’s very noticeable. Fixed screens provide a near perfect flat service that will not distort the image. Hope this help!
If I were doing this as you plan to I would personally get a Epson 3800 or Benq tk710 (tho I haven’t spent a lot of time w the valerian or nicer nebulas yet) with an Apple TV which you could airport audio to a pair of Apple speakers
I think those two are the best middle of the road projectors out right now. The Benq 3100 is also really good but at a cost. I’ve heard solid things about the Hisense and the valerian but no personal experience. Bluetooth may work or may have a lag. Can’t know without testing the combination. AirPlay will not have a lag. But yes there’s lots of ways to get that part to work. I always run wires so haven’t tried many of the wireless solutions but I do hear of lots of issues with Bluetooth sync
Benq 710 is a very good choice. Tho we don’t know longevity yet the valerian are very good. Benq 3100 is awesome. I’m running an Epson ls11000 at the moment…. All start at double your budget. There are good choices between your budget and $2k just those are my current top choices
