I sleep in a 400 in the same weather as my wife in her 600. It's rare that I'll add extra layers compared to her. Even around the house we run more or less to gender norms of her being constantly cold and me being fine wearing a layer or two less than she has on.

I have the 600 and am very pleased with it. I take it out in all temperatures and use in my hammock and bivvy without issue. Packs down relatively small and haven’t felt cold in it at -8C wearing a base layer. If you can stretch the budget to go for it I don’t think you’ll be disappointed.

I'll just mention that my snugpak 'winter' bag is rated to -10C, but there's no way I'd use it in those temperatures. Take the rating with a pinch of salt. My Alpkit down bag (-7C comfort rating) is way warmer than the Snugpak. I don't know about the arctic bag, I have the modular system. And yes, get a decent mat.
