I feel you on the chalky flavors! I’ve had similar experiences. Have you tried Legion Athletics? Their chocolate is pretty good and doesn't settle heavy. Curious to see what others recommend too!

I like Legion and Animal Whey Isolate. The chocolate flavors for both.

My go-to is dymatize iso100. Affordable, tastes pretty good, available everywhere, relatively low calorie, mixes well with whatever you want to mix it with. The best tasting I've tried is Legion Whey+. All the flavors were fantastic, but the cinnamon toast crunch flavor was my favorite. Also mixes well, but it's more expensive and harder to find. You basically have to order it online, but I think Vitamin Shoppe has started carrying Legion products.

Legion Athletics doesn't, it's honestly as smooth as milk, but it obviously comes with a higher price tag for the quality. Premier Protein is very smooth, but they are not powders but the mixed bottles.

I’m currently taking Legion protein. It’s supposedly really clean and helps me get my protein in. The flavors I’ve tried (Mocha Cappuccino and Chocolate Caramel Cookie) have been great!

Well based on what? Protein content, taste, macros, price? I like legion a lot, but its pretty expensive. Ryse has a really good taste. Optimum nutrition has decent pricing.
