Fellow 100+kg runner, am happy with Boston 12/13, Prime X2 Strung, Superblast 2
Boston 12/13 or Evo SL. I haven’t tried the Evo SL, but based on what I’ve read and your wants I think it fits the bill. The Boston 12 is on sale now, the upper is God awful, but it’s an awesome shoe. I think the 13 is a little softer.
Boston 13s are always on sale somewhere. ASOS have some listed at £98 so I’m just waiting for them to drop a 25 or 30% promo code

I rotate between 6-8 pairs, so I suggest getting at least two pairs. As far as what to suggest; running shoes are extremely personal. Everyone is different. I’ve been loving Adidas Adizero EVO SLs, ASICs Superblast 2s, Hoka Skyward X for those middle distance easy runs, Adidas Boston 13s for threshold work, Saucony Endorphin Speeds for threshold, and I also have a stable of race shoes (Nike Vaporflys, Alphaflys) for intervals and racing.
I’d go Nimbus 27 + Boston 13. That’s what I’ve been using lately and really like both but im not quite as fast as you are. You can get both on sale now.
I don’t have any stability needs but I find the heel of the Boston 13 to be pretty unstable. If I was a heel striker it’d definitely be tough to wrangle.
I also bought a pair of Boston 13s heavily discounted with zero expectations that I’d even like them and I actually liked them right out of the box. After about 30 miles, they became a favorite go to and now at about 60 miles I’m absolutely loving them. They are pretty slick looking too.
Boston 13's. I like firmer shoes for speed/intervals so it fits the bill. They improved the upper from the 12 so it's now very comfortable on foot. A lot of people prefer the evo sl but I feel like that's probably better for racing/pbing opposed to trying to build the skill of running fast.
The Evo is much lighter, has all lightstrike pro (Adidas premium race foam) so it's super bouncy and offers more flexibility. I would opt to pick the Evo sl if I had to choose either for a race unless stability was a concern, which the boston 13 would trumph over.
