I have used my M4 Mac Mini for productivity with a Dell U4919DW that is 5120x1440 and it is perfectly legible for my old eyes and glasses, but could be better. I am currently using it with a 32” Samsung S32D850 2560x1440 and a 27” Auria Eq276WN 2560x1440 in portrait mode with better display so the text size matches on the monitors. These two monitors provide slightly better quality text, but that may be because I can scale them better than the 5120x1440. I think you will be fine and suggest you try better display to see if it helps your experience.
I use the Dell U4919DW for past 5 years mostly for development and CAD modeling and got no complaints. I am now looking to upgrade to a HDR monitor but the original is solid.

I'm rocking a Dell U4919DW and it works like a charm. I use BetterSnapTool but there may be something integrated into the OS now for custom window sizes.
I think that is a good thing. So you can fit the whole screen inside your field of view. I got this 49" with 3800R, and that definitely was an early mistake by Dell. I can't see the sides at all, because it's barely curved.
I had this exact setup for the last couple of years (since the Dell UW4919DW was released). It sucks. Don't do it. Dealing with games sucks massive ass. A lot of these clowns can't program properly and the borderless window solution doesn't work well. The mouse pointer is virtually at a different location than where you can see it on the screen. Or the game stretched behind the task bar and you have to hide that, whenever you play the game. (I made autohotkey scripts for that, but it's still tedious). Then the other issues are your sides. Which I assume you would use 25% of your width for, so 1280x1440. Most websites and software suck ass and have no portrait mode. YouTube? Twitch? Discord? Whatever game website you use. There is no twitch with chat below the video instead to the side. There is no discord with servers or channels at the top. Windows also doesn't support virtual full-screen. Power toys can't fix that, they won't because it's the job of the graphics driver, not the OS. There is a tool that adds virtual full-screen, but it's not free and since it emulates drivers, not sure about the performance. What you actually want is a proper gaming monitor, 16:9 or even better 21:9, so you can play games in full-screen or full-screen windowed, so stupid devs can't fuck that up. And then one or two additional monitors or even a tablet for secondary information in a proper resolution or even full-screen as well. It's just not worth the problems.
I tested those Dell’s side by side. The most noticeable is the outer 5-7cm. With 1900r it’s a good read. With the 3800r i had the feeling i had to move my chair 20cm to the left or right.
I really want it and I'm considering pulling the trigger, but I find it interesting our different thought processes. For me, it just needs to look really good/sharp and I don't really care if it's 6k technically or not. It makes me wonder if you're wanting super crisp gaming, video editing, or dual use for home theater or something? For myself, I want it purely for productivity when writing code and building systems. I currently have a dell super ultrawide (49") and a dell ultrawide in a vertical stack and I'd rather one giant screen. I can use FancyZones or something to place everything I'm working on and there'll be more screen real estate closer together without having to look up so much because of the way the screens are mounted/gapped. I also like the hub too. It seems like I can get more done in a better workspace. I just noticed your edit where you don't want to game and it's for productivity. My 49" monitor is good, but I wouldn't say better than a product like this because I need more space and it's not easy to add any more space except above it. It also means my windows aren't as tall as I'd like them in some use cases.
I went from a Dell 34" UW to a Dell 49" UW and honestly the 49" is too wide for productivity. Now admittedly the curve on the Dell is not as aggressive as some of the Samsungs, but the edges of the screen are out of my field of view and require too much rotation of my neck to be useful to me. When I bought the monitor, I thought I was going to make greater use of the picture-by-picture feature to run a customer laptop and my work laptop at the same time but turns out that was not a scenario I really needed (most of my customer's would rather give me a VDI than send me a laptop). I like it for gaming, but I am considering moving to a 38 or 40" 21:9 monitor after tax season.
Same. 49" Dell and it's not very curvy so the far left and right don't get used as much since it's hard to read stuff that far away. It's good gaming on though.
I have both rigs. 2x32” 4k displays that I 100% enjoy and a 49” dell ultra wide that is very uncomfortable for me. Too much back and forth neck movement. I bought the ultra wide first and had to change. Now it gets little attention
Yeah, I just looked up the Dell IPS 49". Price is around $1400. The color accuracy, built-in KVM, and USB-C hub seem great for visual work. I'm guessing the Picture-by-Picture mode helps when switching between devices?
