Are the power specs listed since it seems like this can’t power the dish itself  Unless it can since the Gen 3 router I have has coil whine so not sure if this one can be used instead or if it’s strictly for mesh only

I’ve found the gen3 router to be poor for WiFi, but then again - first time I’ve had the router in the loft/attic. I wired into my study and my son’s bedroom. He plays online games (call of duty etc) - loves it. No complaints.

This. Its what I did. The Gen3 is on the west side of the house with better coverage and then I have a TP Link AXE 5400 hardwired to the router (which is in bypass mode) and the other two Deco's covering the rest of the house.

I wonder how this compares to the gen 3 router. I have the gen 2 connected to dishy and use a gen 3 mesh router, but this seems like a cheap option to add a few more mesh nodes

I wouldn’t get it to replace anything, just to add some extra coverage. Currently the gen 2 is connected to the dish and I’m using the gen 3 as a wireless mesh. I figured if I added 1 or 2 of these I’d have perfect coverage everywhere. My issue now is sometimes I get a weak signal between the gen 2 upstairs and the gen 3 downstairs.

I currently have a gen 2 dish and use a gen 3 as a mesh node. Would you recommend getting one more gen 3 for mesh or adding 2 minis?

The Gen 3 router is also PoE just like the OG one was and runs at the same voltage - So you could use that. Or any other router will do just fine.

My research for a similar application led me to the FritzBox 6860 for 5G, but that only makes sense if 5G is available and you need a range extender/mesh. For 80m2 a hotspot is probably sufficient and you could get away with something like the FritzBox 6820 for around 150€. I ended up getting Starlink when they were offering the hardware for free. It’s a bit overkill, but it’s worth having if your place has frequent service interruptions.

While I’m a Starlink fan, their routers are not great. Get a good mesh setup and bypass the Starlink routers.

Honestly starlink is the best way currently. It’s at the forefront of Wi-Fi technological development and will only get better. It will be some time before any other company get remotely near the standard.
