I have a Gen3 and the standard router provides adequate wifi for both floors approximately 3600 sqft. I purchased a second Starlink router and installed it as a mesh node in my room above the garage. I selected the Starlink mesh router so I could use it as a replacement if/when my main Starlink router fails. I have 18 devices connected to my network.

I’ve found the gen3 router to be poor for WiFi, but then again - first time I’ve had the router in the loft/attic. I wired into my study and my son’s bedroom. He plays online games (call of duty etc) - loves it. No complaints.

This. Its what I did. The Gen3 is on the west side of the house with better coverage and then I have a TP Link AXE 5400 hardwired to the router (which is in bypass mode) and the other two Deco's covering the rest of the house.

The Gen 3 router is also PoE just like the OG one was and runs at the same voltage - So you could use that. Or any other router will do just fine.

Third party mesh works so much better thn the lower cost Starlink mesh. Most complaints here are with OEM mesh

If you aren't going with Starlink components I'd go with ubiquiti or "UniFi" as it kind of come to be known. I use to Starlink routers inside my house and I have one far away in the back yard for when we have guests for fire nights and lake watching just my $.02

if u have the budget for it, nothing really beats ubiquiti, but u will need to buy a cloud gateway (or not if u can just set a network application up on an old laptop) and a few aps, u can still use the starlink router as an ap (which is what Im doing temporarly as I am waiting for a gateway, im running the network application on my main laptop, slows it down a little bit, but as I am studying for my alevels now I dont need it to do anything other than run chrome so its fine). You can just get one u7 lite for around a 100 pounds, if u want a bit more u can buy an express 7 for around 200 and another ap and put the starlink into bridge mode
