I've been using the soundcore sport x10's. I prefer earbuds with the little ear hooks just for safety reasons. Even with a perfect fit I always worry about them falling out.

The buttons are programmable and I have mine set to have one click on the right side raise the volume and one click on the left side to lower the volume. 2 clicks on either side activate play/pause.
Yes to both. I have the x10 and the noise canceling is medium good but when engaged these become bass canons. Like subwoofer levels.

I'm obsessed with my Anker Soundcore Sport x10s. I've been wearing them for running for the last year and love them. Comfortable, good sound, good battery life, not too expensive.
They have ANC mode, normal mode, and then transparency mode. I'm not really sure what the difference between the last two are, but I guess one is more active pass through. Never had issues with wind noise while running or while on calls. The x10s are my favourite I've ever owned. Got some x20s recently when I thought I lost my x10s and don't like them as much. Feel cheaper and I don't like the controls or buttons on the headphones. Case is half again the size of the x10 case.
I use a pair of Soundcore X10s. EQ adjustment in app, noise-cancelling, and has earhooks to keep the things on me, as my ear canals are strangely shaped and I can't use regular earbuds like most others without them falling out every few seconds. Battery lasts about 7.5 hours with non-stop sound at a medium volume, case holds about 4-5 full charges (I think?).
For gym use, try looking into the Soundcore Sport X10 or the Jabra Elite 7 Active, both have secure fits and solid sweat resistance. The Jabra has better noise isolation, while the Soundcore usually hits harder on bass. Another vote for the x10. I’ve worn them in a few downpours and they’re still working like they did day 1. Same too with long runs in sweaty Australian summers. Did have an issue where an earbud wouldn’t charge, but found their after sales support to be really helpful and was easily covered under warranty.

Yeah, once you want a hook, most earbuds become sporty models, but you can still keep things private as long as they seal in your ear. Two easy ones to look at are Beats Fit Pro, which stays locked in with the wing and does not leak much, and Soundcore Sport X10, which is more budget-friendly and super secure for walking or running with decent transparency too. Clip-style buds are usually open-ear, so hook plus an in-ear seal is the best move.
If you just need something reliable for workouts without breaking the bank, check out the Soundcore Sport X10 or JLab Go Air Sport. Both have secure ear hooks, solid Bluetooth connection, and surprisingly good sound for the price. They’ll stay put even during intense sessions.
