Check out the Amazfit GTR 4 or Galaxy Watch 4 if you can find it on sale - both hit most of your requirements and actually look like proper watches instead of those chunky fitness tracker things. The GTR 4 especially has insane battery life and the health tracking is pretty solid for the price range
Galaxy Watch 4 is gonna be your best bet for accuracy on all those metrics. The Samsung Health ecosystem is pretty solid and the sensors are decent quality Huawei's banned from Google services so that's a pain, and Xiaomi's hit or miss with accuracy but crazy cheap if budget is tight
I changed a galaxy watch4 for a Garmin Fénix 8 and there is no color.....no point of comparison.
I just upgraded to the galaxy watch 7 (just set it up it minutes ago) 40mm and the Watch 4 classic looks better and the rotating bezel protects the screen. I'm a little scared to break or scratch the glass of the 7. But it's quicker indeed, and lighter but let's see if battery life is better, I don't use the screen always on but was having bad battery life on my aged watch 4, that wad the main reason. I considered the OnePlus Watch 3 for its great battery life but since I own a Samsung s24 ultra decided to buy a used 7 for 81 euros.

If you want to be able to snooze or dismiss notifications without requiring two hands or without having to look at the watch, then the classic is the only way to go. Otherwise, the ultra. And compared to the GW4, they're both just a much nicer and snappier experience, with hardly any missed alarms (unlike the GW4 which misses at least a third of them). I use my GW4 as a backup and beater, and it relatively sucks balls once you get used to the speed and reliability of the newer models.

I have a Samsung watch 4 with a ~$25AUD strap/case thing from supcase or something like that. I've taken that thing through hell and it's fine for years.
